Sweetcorn Fritters recipe

Ingredients:
Oil, for deep frying.
1 medium egg.
100 gm of self-raising flour.
1 teaspoon of baking powder.
3 cobs of sweetcorn, stripped of kernels.
1 tablespoon of fresh thyme leaves.
Salt and freshly-ground black pepper.
Preparation Instructions:
In a heavy-based saucepan, heat the oil for deep frying.
Crack the egg into a bowl, then mix in the self-raising flour and baking powder together to make batter.
Combine the corn kernels with the thyme leaves; add to the batter.
Deep-fry heaped spoonfuls of batter in the oil until golden.
Drain well on kitchen towel.
